A little background on this recipe before we get into it. My sister is a baker so I have had my fair share of different kinds of cakes. The one cake that has always stuck in my head was her chai tea cake. Here is the recipe below the recipe will be the flavor notes of what I found out about the flavors and how they work together.
Cake Batter (CAP) - 3%
Yellow Cake (FW) - 3%
Shisha Vanilla (INW) -2.5%
Marshmallow (TFA) - 1%
Whipped Cream (TFA) - 1%
Chai Tea Tornado (NN) - .5%
Cake Batter / Yellow Cake / Marshmallow / Whipped cream - This is my normal CakeStone if you would call it that I add this for every cake recipe I have ever made. I think the cake batter and yellow cake work very well together in order to add the flavoring where that becomes part of the cake.
Chai Tea Tornado - This is very overpowering. I had to tone this down from the original 2.5% recommended from NN to get this to work with the cake. It would be too spicy if that makes sense. So if you're working with this flavor please please please use it in moderation. It will overpower everything in the mix if you don't tone it down.
Shisha Vanilla - This was the key to get all of this working together nicely. The creaminess of this just pulls it all together. It really cuts down on the spice of the Chai Tea. So I would use this as an additive whenever you have anything drowning out a flavor that is supposed to be a base. It really brings that base back to the foreground so it can be tasted.
Is your sister Yashimabet from the Kids Baking Championship
Haha no she is not she is from Ohio lol. Why did she make a Chai cake?
Great notes, I love insight into how flavors cooperate or clash. Been trying to pull a cake base together for a few days now, I'll be trying this one, thanks!
Ooh, looks really yummy. I'll have to pick up some cake batter and whip this up! Thanks for the content and notes! And yeah, that NN Chai Tea is pretty dang potent.
You can try it without the CB but not sure if the sweetness would be there from it, or it may drown out the cake all together. Maybe try some CAP Vanilla custard in place of it. 1% just for that touch of batter just may work if you kick up the yellow cake just a half percent. I know its hard for us sometimes as mixers if we have been doing things with a specific gathering of flavors to change it around but give it a try I am always looking for a variation in case i ever run out of an ingredient.
Great submission. I'll be trying out that cake base to see how I like it. Thanks for the flavor notes as well.
Looks great. I would like to try this but I don't have the flavors. Do you think that this would work?
Yellow cake- 3.6%
Capella v1 Custard- 3 %
FA Marshmallow- 1%
FA Fresh cream- .6%
NN Chai Tea- .5%
Hell give it a try I may mi it up and see how it taste. Not sure how it will work with everything. I know the Shisha vanilla is def needed.
It's nice, just mixed it up today. The Chai is STRONG! Too strong for my tastes. I bet that shisha Vanilla is what it's missing, based on your notes. Unfortunately it's not in stock at BCV or anywhere else I've checked. Also, I must wait for the creams to steep. I'll re-assess as I vape through the 15ml.
I'm going to try making it into a spicy chocolate donut, like the mexican hot chocolate donut from Voodoo. I love that doughnut. It's a chocolate cake base with granulated sugar, cinnamon and a touch of spice (cayenne?). The Chai tea concentrate seems to capture that spice well.
So Here is what I'm going to try next-
NN Chai Tea Toronado- 0.3%
(CAP) Cinnamon Danish Swirl- 1.3%
Yellow Cake (FW) - 2.6%
Vanilla custard v1 (CAP)- 1.7%
(CAP) Choclate Glazed Doughnut- 2.8%
Then, If needed 4 drops of biscuit per 30ml.
