Flavour 'separation' for my Spring Cheesecake
submitted over 9 years ago by arpzilla

I've come up with a new recipe which I based on a recipe I found online (http://www.yummly.com/recipe/Spring-Cheesecake-Cake-raspberry-lemon--orange-1032061). It's a raspberry, lemon & orange cheesecake. I'm happy with how it's turned out, it's a nice flavour but I was wondering if anyone had any ideas on how I could make it more layered rather than being an amalgamation of all the involved flavours. That's the thing that really separates a good recipe from a great recipe in my eyes but isn't something I've managed to master yet.

Spring Cheesecake

  • CAP New York Cheesecake 6%

  • CAP Italian Lemon Sicily 2%

  • FW Raspberry Natural 2%

  • CAP Juicy Orange 2%

  • INW Biscuit 1%

  • FA Fresh Cream 0.5%

Would love to hear anyones thoughts on this

it calls for meringue, consider adding a little FA Meringue. It's sweetness will help balance the tart and acidity you got going on.

I think this would benefit with a little vanilla flavor. Not sure what you got in stock but another thing the recipe calls for your missing

Thanks! I did consider adding FA Meringue.. I might try the torrone/meringue option from /u/enyawreklaw rhodonite, he says its that that gives it the powdered sugar exhale, if it works here then it'd definitely add a layer.

I don't really have any straight vanilla, I have tfa vanilla swirl, though so perhaps that

Maybe .5-1% dragonfruit could blend it.

I have it but I haven't really used it, I'll give it a go and see what it does :)
