I did look up EM and sucralose and I know EM only gives it the feeling of being sweet and sucralose is like adding sugar but which is better, what do most people use? I do love my juice to be sweet and I want to get some sugar lips so should I get EM or sucralose?
>EM only gives it the feeling of being sweet
EM does have a sweet taste, but it is subtle. I liken it to a little bit of cool whip; the smooth feel is more "sweetly satisfying" than just triggering the sweet receptors.
>sucralose is like adding sugar
It's more like adding saccharin if you use more than two drops per 10ml.
Which is better? It depends on the recipe.
I prefer EM with fruits just like I prefer cool whip on strawberries over straight sugar on strawberries.
I prefer sucralose on some bakery flavors like cinnamon roll type flavors. You don't put cool whip on cinnamon rolls do you?
Using the cool whip vs. straight sugar analogy can help you decide which is best for your tastes and your recipes.
This is good info. I'd want to add that don't think adding either of these will give you "sugar lips" or a blast of sugary sweetness. You need to really make sure your recipe is on point before sweetening or else you could wipe out your subtle flavors and have a weak juice.
adding to what /u/screamqueen813 said, the sugar lip thing is definitely sucralose
sucralose is harder on coils though
Yes, the sugar lip! Some people like that, I know I do. other people absolutely don't.
There is some difference between the way that people experience Low Energy Sweeteners like sucralose. Some folks think it tastes almost exactly like sugar while others are hit with a strong saccharin (chemical-y?) flavor.
I have both EM, and sucralose (CAP Super sweet) but rarely use them. Sucralose is what will give you that lingering sweetness on your lips, but I feel it takes away from the flavor of the mix. When I use sucralose, it's normally a drop per 10ml. EM, maybe as high as 1%.
Neither. Sometimes my flavors aren't too sweet, and sometimes I use a little of a complementing flavor that's already sweet. Sometimes I use a drop or two of the marshmallow flavor. I also use 100% VG and VG is already somewhat sweet.
Honestly, lack of sweetener is one big reason I got into DIY. All the flavors on the market taste like liquid donuts to me, but in a bad way. 100% VG makes most of my stuff sweet enough as it is.
I use EM in most fruit mixes for the smooth sweet mouthfeel.
Sweetener I try to avoid, it funks my coils and can be a crutch when on the last stages of formulating a recipient, although most cereals and super sweet food products benefit from the addition.
There is an odd quality to EM's feeling of being sweet that I haven't seen mentioned yet. It is subtly addictive. It has a subconscious "ohh I'm having something sweet" response that makes you want more, even if it sucks. I've had recipes that tasted mediocre at best, but I couldn't put down.
This makes it a little dangerous to work with, but the benefits (in very small quantities) are worth the risk. I think every mixer should practice working with EM, Sucralose, and FA Joy. They all provide an important role in flavor profiles, but picking the right one and the right amount comes down to art. Anyone who says they use none of either is like a painter saying he won't use blue on moral grounds.
Sucralose. @ 2% with any base flavor that has the word "candy" and its good to go
EM I'm kind of hesitant with because over time it dulls flavors, I've played with stevia with mixed results
Yeah I like more natural flavors but they usually aren't sweet, I find a lot of candy types to taste too much like artificial unless im looking for a specific flavor like bubblegum, jollyrancher and those types. I tried sucralose today, most people told me 1-2 drops per 10ml but i like my stuff super sweet and added about 3 drops per 10ml and its pretty good. I think it might be too sweet in a tank but its high VG so I just drip it. Made a donut flavour and a strawberry cream, and a pineapple cake.
Lots of us try to avoid sweeteners at all cost. I like the extended life of my coils.
With the heavy VG sugary juices I always use an RDA anyways, they are easy to clean, dry burn without the cotton and rinse under water twice and you're good to go. I've tried sweet cream, marshmellow, brown sugar, caramel but I have a super sweet tooth I need more so I add a few drops of sucralose and its good for me.
