The quest for the perfect gingerbread

I tried TFA's gingerbread, but it contains a small amount of anise that I absolutely despise. INW Spicy Biscuit smells amazing but just tastes too authentic and I haven't been able to make it less dry yet. Capella's gingerbread is decent but is just really bready and needs some love. So I'm looking for input on FW gingerbread before I make a holiday order. I have their ginger and it is surprisingly pretty good so I'm hoping their gingerbread is as well. For some reason its one of the few flavors I haven't tried yet and I didn't find any discussions on it in any threads.

give TFA gingerbread cookie a try too, less eugenol

i have fw gingerbread, but never used it.

cap gingerbread tastes a lot like cds to me

Assuming you are talking about gingerbread as a biscuit?

Cookie/Spice -

  • Mama J's The Ginger - for the essential ginger spice
  • TFA Brown Sugar - for baked and molasses/brown sugar type note, sweetener
  • FA Honey/FLV Rich Cinnamon/FLV Clove/FA Black Pepper - complete the traditional spice profile
  • FA Cookie - Great doughy base, CAP Sugarcookie if you after gingerbread as a cake
  • CAP Vanilla Custard - light touch to complete the recipe with body and richness

Royal Icing

  • CAP Butter Cream - go light, will give you a nice icing taste
  • FA Meringue - add for more richness and authenticity (egg white in actual royal icing), sweetness, smooth out the cookie a bit more, icing pop out a little extra

Would be pretty dam tasty, lol

FA black pepper sounds scary haha. I'll have to try out Mama J's the ginger. My main problem is trying to get that traditional spice ginger taste without it being so dry. Thank you for your suggestions this was very helpful!

Hangsen gingerbread isn't too bad. It's more the gingerbread without the cookie, but I've played around with adding the bready base to it with good results.

Capellas gingerbread is basically cap sugar cookie with ginger

id have to second this. try mixing cap gingerbread, cap sugar cookie with a cream base. i use the cream base from the "leaked" cuttwood unicorn milk recipe minus the vanilla bean ice cream, i hate that flavor!
