How to add tartness to strawberry without muting the cream?

Tried mixing for the first time last week. Very exciting! Made a mix of strawberry and cream that I really like. Now, what can I add to it to impart that tartness of freshly cut real strawberries (it tastes more like strawberry ice cream now)? I read that Malic Acid tends to mute flavors over time, so we wouldn't want that. I have access to most of the TPA line, but that's about it.

Edit: I thought of adding a small percentage of another (tart'er) berry to boost the strawberry, but there're so many of them! Blackberry, blueberry, boysenberry, huckleberry, raspberry, blackcurrant, cranberry... What made you pick raspberry? Anybody has experience with Alltheberries?

I think mixing another red berry will stay true to the strawberry taste. You start mixing in blackberry or some other tart dark berry and the juice will have mixed berry taste to it. I recently experimented with this and I agree with adding a little raspberry.

You could had something like 1% INW or FA blackcurrant, it has a nice natural tartness and it really combines with strawberry flavors and will not mute the strawberry.

More like .2% of INW or FA blackcurrant for tartness. 1% FA blackcurrant dominates most mixes I've tried.

Inw cactus @ 0.5% I do this with a lot of my fruit mixes though. Makes them "juicy"

Sounds interesting! I have no idea what cactus tastes like, but if it's fresh and juicy, I'm tempted. That 21 euro minimum order though, what else should I get...

If you want fresh and juicy cactus is what you want. Throw it in fruit flavors at a half a percent to really fill out your juice and make it taste better. If you're wondering about what more inw to get raspberry is very popular here as well as biscuit. As far as a tart taste to your original post I've found cap sweet guava to have a bitter sort of grapefruit taste to it. Maybe try it at one percent or maybe two to start.

Piggybacking here, been holding off on making a post. But i have tfa strawberry cream, tfa orange cream, and tfa ripe banana. I want to make the cream a little stronger in the first two, and maybe make a banana milkshake one.

I have tfa bavarian cream and tfa vanilla bean ice cream.

What percentages would be good?

I havent touched the ice cream or bavarian cream flavors yet, not sure how strong they are yet.

Freshly cut strawberries? Maybe something like Inawera Wild Strawberry is what you are looking for?

I'm not really sure what the difference is between a regular strawberry and a freshly cut one is. TFA Strawberry doesn't sound like it'll fit the bill, but perhaps TFA Strawberry (Ripe) or TFA Organic Strawberry could.

Wild strawberry is an interesting flavour, kinda candy? Kinda grassy? It's a strange one. In very small amounts, we're talking drops of a 10% dilution, it can add something to strawberry. Other than that I find it just overpowers everything else in a mix.
