Mustard milk tastes like MBV
submitted about 10 years ago by hblamo

Mustard milk tastes a lot like salacious strawberry.

This is with only a single night of steeping, but kinda interesting I think. Good thing I liked that juice ;)

I tried to make some but don't have any Vanilla Bean Ice Cream so I used a bit of French Vannilla+Vannila Custard both by CAP, I wish I'd of known it was gonna be this good, I let it steep a week b4 I tried it and wow, there's no way this 10ml tester bottle will last while I steep the 60ml I made last night

Mustard milk improves greatly with steep time. When it's a pretty golden color, it's perfect.

Mustard milk sounds like an accident with dirty dishes..... I'm intrigued.

My notes after 2 days of "steeping"

Very peppery, not apparent in vg+nic alone. Strawberry very muted, could stand to be sweeter. Not as creamy or as full as I'd like.

To test:
6% strawberry tpa

2% sweet strawberry cap

4% vbic

2% vanilla swirl

1% marshmallow tpa

.5% em

Goal: increase complexity of strawberry, slightly sweeter, tone down pepper notes, increase mouth fullness.

Obviously will need tweaking, but this is just where my mind went to develop something closer to what I'm looking for. May play around with .5-1% dragonfruit as well as it definitely plays nice with strawberry.

TFA VBIC gave me that peppery taste. I'll have to try it again with the FW I have.

I tried my modified recipe out and it's almost where I want it after just a 24 hour steep. Hopefully with another few days the strawberry will mature a bit and start to pop. If not it looks like it's back to tinkering. Definite improvement on the pepperiness though, might cut the vbic to 3% though. Probably going to drop the em out as well, don't want it to kill the flavors over time.
