makes a fantastic starting point for a bearclaw flavor and pastry flavors in general. Just figured I'd share, and see if anyone had any ideas of other flavors to add to elaborate on that bearclaw flavor, or if anyone had any other recipes they had come up with using FA joy.
FA joy has been one of those strange flavors for me, definitely does not work as a standalone, and is lacking any grainyness that the acetyl pyrazine helps make up for, but it really just has a lot of yeast flavor to me, almost like a cross between a beer and an unsalted pretzel. So lets hear 'em!
Pretty sure I have all of those ingredients coming in the next couple of days. What is the difference in flavor between 1 and 2 drops per 10mL of the meringue? Is that more of a cream-y flavor or what?
to me, meringue works pretty well as an sugar based icing flavor like you would find on a bear claw or other pastries (not like a cream cheese icing though), but I find that it is very easy to put too much of and it has a very distinct meringue flavor, instead of a sugar coated icing flavor. So it just depends on the mix. Usually I will add meringue to a mix last, and go drop by drop until I am happy with it.
anyone got a substitute for FLV cream? i have TFA Vanilla swirl, and all the FA creams..
