A new icecream sundae flavor I am working on

  • Dairy (TFA) 1.5%
  • French Vanilla (TFA) 0.5%
  • Fudge Brownie (CAP) 1%
  • Peanut Butter (TFA) 1.4%
  • Sweet Cream (TFA) 1.2%
  • Vanilla Bean Ice Cream (TFA) 6.5%
  • Triacetin 0.5%

80/20 vg/pg

Looking for suggestions to make this flavor better, I feel like it is missing something but I can't seem to put my finger on it. Hopefully you try it and enjoy it or try it and have some good criticism to make it better. Currently getting more of the fudge brownie/fudge sauce flavor then ice cream on the exhale. Not sure if using triacetin at that low of a percentage does much to the all around flavor also looking for pointers in using triacetin, thanks so much.

The main issue with chocolate I've been having is that after a steep, it turns everything into chocolate. I can't really pull just chocolate hints out, especially if the mix is a very delicate one. I'm getting closer, yet, I'm sill quite far away.

I have had luck with double chocolate (clear) in really small percentages like 0.5% in my coconut custard cake mix. Every other hit or so I feel like I am tasting a hint of chocolate on the exhale. Maybe its because of the ratios of all of the other flavors, I dunno! I haven't done too much experimenting with chocolate yet.

Triacetin at 0.5-1% overall should impart a creamy mouth feel. It should also help homogenize the flavors better overall. I've gone as high as 2% but really prefer it at the lower percentages.

I'm assuming that this is all TFA flavoring, right? Also I have no experience with peanut butter. Would you say that the best one is from TFA? I may have to get some. Thanks.
