I've been trying to find a flavor that tastes like blue. Not like a blueberry or blue raspberry, but like a blue freeze pop, blue water ice or blue Top Pop from Wawa. LIke...if the color blue had a flavor, this is what it would taste like. I've tried various blueberries and blue raspberries and anything blue I can find, but they haven't really had the flavor I'm looking for.
Anyone know of anything?
wouldn't this just be any raspberry recipe but with with Koolada? Blue freezer pops aren't a complex flavor profile so it's just a matter of ordering raspberry flavors from different manufacturers and find which one suits you.
This is basically what I've been trying, but with ethyl maltol to give it a bit of a sugary taste. Nothing has hit the mark yet.
The problem with ethyl maltol is that it mutes flavors so much over time if used higher than 1%. An idea would be maybe .5% of Marzipan (FA) and .5% sweetener or ethyl maltol. I haven't tried marzipan with raspberry but it may work better w/o muting flavors. I may give it a go on my next batch mixing to test it out.
I haven't tried marzipan at all. I've never even heard of it being used in liquids. I'll have to give that a shot next time I put in an FA order. It's pretty rare for me to use ethyl maltol in anything. I've just been trying it in small doses with natural fruit flavors that I want to try to sweeten up a bit and when trying to make a freeze pop flavor.
OSDIY sells a blue raspberry slush flavoring that might be what you're looking for.
