Using succinic acid
submitted over 10 years ago by Devo9090Frugivore

I've read that the food and flavor industry uses succinic acid as an additive just like citric acid. Succinic acid is supposedly used to give a salty and slightly bitter taste to food.

Has anyone used this in diy before?

Msds for those interested: http://www.sciencelab.com/msds.php?msdsId=9927284

I'm curious about the flash point. And if the dilutions we would use it at would still trigger the inhalation irritation.

At < 1% concentration, I'm certain there would be no danger of flash point.

And who knows about throat irritation. There are a lot of ingredients that bother my throat at significant concentrations.

I still want to be sure that it wont cause any lung irritation or undesired throat irritation before I try it.

Peculiar. I was just thinking about what I could use to add salty flavor to a recipe I'm working on.

Does it really? Still so much to learn.

Yup, lots of folks use saline for salty flavor. Search for it on this sub and you'll find a bunch of different threads on it.
