Trying my hand at a churro flavor. It turned out ok but could use some tweaking. Anyone care to lend a hand? I think it has a little too much cinnamon or not enough "sugar".

Ever think maybe you're over thinking it?
I'd drop the sweet cream, caramel, ethyl maltol, and vienna cream; up the waffle(1%) and churro(2%); and completely remove the PG, since pastry flavors taste best in VG, IMO.
Find a good 3-4 flavor base, then work your way up from there if it's not what you want.
Yeah I probably did... Although in my defense I was trying to get some hints of caramel and cream in addition to just churro. I can have the tendency to take a "shotgun approach" when I get into uncharted territory. That combined with the "kid in a candy store" effect gives you what I like to call the "kid in a candy store with a shotgun" effect.
In all seriousness though I'd like to keep one of the creams, maybe I can try Bavarian instead as suggested by /u/SDVAPE . But I could probably drop Cinnamon Spice and Brown Sugar Extra. If I use a spiced cream as previously mentioned I could maybe even get rid of the DX Caramel Original also. You are very right though, I think I am over complicating it. Maybe I should start smaller.
I'd recommend what /u/meanrockSD and /u/SDVAPE said and use Horchata for a more complex cinnamon flavor closer to a Churro. I do like using Brown Sugar Extra and could work very well for the cinnamon and sugar effect you're going for, but careful not to overuse it.
Also, Vienna Cream may not be the cream you're looking for. I find it adds a nice thickness to the body of creams but can have a somewhat muting effect if overused.
Good luck! Sounds like you're heading in the right direction, but keeping it simple usually yields better results.
Drop the EM. Drop the Smooth. Drop both the creams & cinnamon spice and replace with some FA Catalan Cream (cinnamon/nutmeg spice) or Cap Horchata; drop the cookie, slightly bump up the Waffle, and add .25% FA Marshmallow if it's still not sweet enough
I don't have Horchata but I should really get some. Is Catalan Cream more spiced than Vienna? What are the differences?
Vienna cream isn't spiced. It's creamier/milkier & more like eggnog.
Vienna is a more full-bodied cream whilst Catalan is a bit flatter with cinnamon & other spice notes.
