My Milk and Honey

I finally found the flavor I was going for. I was missing the Bergamot! This is a creamy orange honey with back notes of graham cracker. I had tried using TFA Orange Cream for the orange notes but I couldn't quite get the citrus flavor I was wanting. Tried it with the Bergamot and voila!

FA Fresh Cream 1.5%
FA Meringue 1.5%
TFA Vanilla Swirl 2%
FA Bergamot 1%
INW Honey 1.5%
TFA Bavarian Cream 4%
TFA Graham Cracker (Clear) 3%

Will be trying this with FA Honey (at a much lower % than 1.5%) when I order more flavors.

This looks great thank you. I dont have the honey. Bought TFA honey on my first go round awhile back. I prob couldn't find it if I tried. Once you find out which honey you like more make sure to let us know.

Will do. I hear FA Honey is VERY strong so I'll probably start it at around .1% and see what that does. Always better to go low and add more if needed.

I don't have any experience with TFA Honey but from what I've read it looks like it requires about a month long steep. What I like about the INW Honey is it almost has a floral note to it that goes really well with this Bergamot. Highly recommend it if you like honey.

I've been working mine with la honey clover @ 2.5% it needs about a week to steep to bring the cream flavor in and drop the Graham cracker flavor. (Cap Graham cracker v2 at 5.5%)

Were you going for the well known Milk & Honey on this? I can't think of the brand now. I wasn't a big fan of that, but this does sound good. I'll have to use TFA honey, but I like the looks of this. What's the rec steep time on this? Couple days?

No I haven't had it, but I hear it is more of a honey nut cheerios or something. This is just a creamy dairy flavor with what an orange blossom type of honey.

Steep time will be dependent on what honey you use. I only have experience with INW Honey, and it starts to pop nicely after about a week-week and a half. This recipe tasted good to me right after a thorough mixing, but with age the honey gets a more bold taste.

So I made it today, using TFA Honey at 1.5%. Apparently, 1.5% of TFA honey is exactly the amount to make it smell and taste like baby powder. Gonna let it steep a bit, then try again with a little less honey. lol

To me, FA and INW honey are much the same (taste and strength-wise)

I've used it up to 4% with no adverse affects. To me it's a very light flavor. I haven't tried the other tfa Graham cracker though.

Yeah I've treated it more like a cheesecake flavour. 3-5% and still tasting great, very mix specific though at higher percentages, too much fruit makes it taste horrendous imo.

I mixed this up earlier today. It is very interesting. The bergamot is overpowering right now. Also, I did 3% of an FA Honey 10% dilution instead of the INW. I'll let it sit for a few days and post back.

Might be because of the 10% honey dilution? A few people have replied about FA Honey and said when they dilute it, it has no taste. The Bergamot to Honey ratio might need to be adjusted to what strength of honey you are using.

Day two, the bergamot has calmed. This is actually pretty good. I'll keep checking back and see how it develops with the honey where it's at.

I'm also testing this recipe using Vienna Cream instead of the Bavarian Cream. Gotta let it steep as I just made it last night, but the initial taste was good.
