Just don't let it go above 120°F. Flavors start to break down after that and taste terrible. I've ruined a few liters of juice because I forgot it was mixing and it got too hot :(

I set it to the lowest temp, and turn off the heat once the vg thins out enough to actually stir. Seems to work great.

I get to 62c~ which is about 145F. Am I in danger of mixing bunk?

Yes. I've ruined batches at 128°F. If it's only been like that for a little bit you may be fine or you may get really lucky and it'll taste fine. But, at 145°F, I wouldn't be too hopeful.

Woohoo! She still looks beautiful and mixing up one of our favorite blends :-) I should have let you know, setting 4 through 5 are indicative of approximately 80 to 90 C on a 500 mil beaker filled. Good approximation to mix with :-)

Only for the purpose of evaporation of ethyl alcohol :-) evaporation occurs at 78.9 degrees Celsius and just barely exceeding that temperature for a prolonged period of time is necessary for our proprietary steeping process

That's what I would love to do, reach or exceed the boiling point of the alcohol. Unfortunately I can't hit 80c on my crock pot.

Think there's any danger in letting juice sit at 62c~ for 3 hours? I've done that a bunch and so far no issues except for mixes that tastes bad before the steep, they just got worse after lol.
