I want a fairly sweet graham cracker, not too much on the cinnamon side but not too custardy. Any tips for a starting point, percentage wise?

Okay first attempt. Mixed 15ml...
4% graham cracker v2 4% cheesecake /w graham crust 3% vanilla swirl
Tasting notes right off the bat.. no steep of course.
Was trying not to overdo the graham, but I feel like I could have gone higher than 4%. Maybe 5 or 6% next run
Overall though, I like that it's actually pretty mellow. Too much cinnamon flavor kind of irritates me, this is pretty smooth. Maybe like .5% sweet cream to add a slight milky/sourness would be nice.
I made the mistake of doing 10% cinn Danish and 10% graham cracker. Cinnamon DESTROYED it. Steeped it for a few days with heat on and off, now looking for a way to dilute it ;-( same with my plain coffee, it needs enhancers. Made my first purchase with very similar flavors to yours.
