I was searching around recently through some old posts and came across something posted by /u/JustStayHereAndDrink in a random thread. He says it is a Gambit-like recipe. Just gave it a try the other day and it is really nice. I haven't had real Gambit so I can't comment on the accuracy but either way it is a really great Apple Pie a la Mode. Just thought it was deserving of a post since it didn't get much attention when he posted it and he hasn't been around in a while.

It's pretty close ingredient-wise to the one I tried: http://www.e-liquid-recipes.com/recipe/37210/GAMBIT+2
I taste tested this the first time I made to, to the real thing - it's 98% there, it's just missing the spicier vanilla that 5 Pawns has.
I have a bottle steeping right now. :) Takes about a week or two to mature into something really good.
I also mixed this Castle Long recipe: http://www.e-liquid-recipes.com/recipe/37215/Castle+long+clone+2+%2528TFA%252FTPA%2529
I've never had the real thing, and this one took 3 weeks to start steeping into something that didn't taste like brown sugar, but a month later, it's amazing in my Kayfun, been vaping it all day. It's sweet, and I get all the flavors - the first thing I thought was "Almond Joy with bourbon". Amazing. I'm really glad I made 60mls. :) It's sweet and candy-ish, but it's not overwhelming like a lot of desserts. Great with coffee!
I've heard a "spicy vanilla" mentioned before. I'd guess it is Vanilla Bourbon? But if spicy means cinnamon-y it could be something like Catalan cream. I'm tempted to order some of the real deal to try and get closer. Think I might do that soon.
